Sweet Potato Fries and Almond Cheese
One of My Favourites!
I’ve always been a savoury food person. I’d take something rich and savoury over sweet any day! Before I went vegan, I used to LOVE Italian goat cheese. It was so delicious with some garlic and herbs baked in the oven and then spread on some grilled bread. AMAZING!
After becoming vegan I discovered almond cheese! Here is the first almond cheese ball recipe that I made and it’s so tasty! I decided to make some small adjustments and what do you know, it reminds me a lot of Italian goat cheese! It’s SO tasty!
I sometimes enjoy making a big meal, but there are many times that I like to make something that doesn’t take a long time but still tastes amazing. This recipe would be one of those! It takes some time to bake the sweet potato fries but the actual time I takes to work on this meal isn’t so much.
Some of you might wonder, why I don’t just keep eating the real deal (goat cheese). There are several reasons for that! To read my detailed list of why, click here. But to sum it up, here’s why:
- Ethical reasons. For the animals, environment and for the starving people in the world that we could feed if we didn’t use all that grain to feed the animals that get butchered.
- Health reasons. It has been well proven that we do not need animal products of any kind to maintain health. Not only that, but our bodies don’t appreciate having meat and dairy in it. It makes more work for our systems to filter everything out. Since that is the case, why not eat in the way that is intended for our bodies. It’s more than easy to be a vegan in today’s world. The hardest part is deciding to actually do it!
- Spiritual reasons. I believe that our bodies are a temple where God wants to dwell. We should keep our minds and bodies as clean as possible so He will want to dwell there. Another reason is that I have a hard time believing that God approves of the horrible animal abuse going on this world and I don’t think it’s something that he would want us to support.

Sweet Potato Fries and Almond Cheese Recipe!
How To Make Sweet Potato Fries and Almond Cheese
First: Slice the sweet potatoes, mix in the oil and salt and put it in the oven. Turn the oven to 180*C/350*F.
Next: Put the almonds in boiling water to blanch. When they come to a boil let them cook for about 15 minutes. When they are done, strain them and rinse with cold water. It’s super easy to get the skins off! Just squeeze each almond and the almond come flying off the skin.
When you’re finished removing the skins from the almonds, put the almonds in the blender together with the coconut oil, coconut milk, water, salt, McKay’s Chicken Seasoning (or vegetable bullion), and raw garlic. Blend this until it’s smooth. It’s important that it’s quite smooth! You won’t want chunky cheese. 😬
After you’re done blending, mix the dill in by hand. Pour the cheese into 2 small soufflé dishes and squeeze fresh garlic on top.
You will want to turn the sweet potatoes a time or 2 while they are baking so that they get evenly cooked. When you see that the sweet potatoes are about half way done baking, put the almond cheese in the oven. The cheese will need to bake for about 20-25 minutes. You will know the cheese is finished when it has risen and become slightly browned on the top.
I like to serve this with a salad and freshly squeezed lemon juice on the top of the sweet potatoes, cheese and salad. Yum!
Here’s a tip!
The almond cheese has also a cream cheese-like texture and flavour. It’s also delicious on crackers or bread! It’s very filling and is a good way to get some vegan protein.
