I can’t remember when it was that my mom started making this Black Bean and Corn Dip recipe, but it was an instant favourite at our house! 

The fresh vegetables together with lime juice and cilantro makes it not only taste amazing but tastes so healthy! 

I like easy, versatile recipes that are tasty and filling. This recipe is one of those! The most common way my family eats this is with some guacamole and some corn chips. But you can also put this in a lettuce wrap, in a whole wheat wrap or on the top of a big salad, all together with guacamole! Serve this as an appetiser or as the main course. So delicious! 😋

Do you often have guests over and wonder what you can make? Try this recipe! Make a big batch of this Black Bean and Guacamole Dip together with guacamole. Have some healthy corn chips and salsa on the side, this recipe will be a hit every time! 

I love making recipes with fresh cilantro because cilantro is an EXCELLENT food!

In addition to loving cilantro, I love eating beans. 

You’ve probably heard people ask a vegan person, “but where do you get your protein?” This age old question can be put to rest. There are many, many, many excellent plant based sources for protein and beans are amongst the best. One cup of Black beans has 15 grams of protein. That is pretty good!

  1. Strain the corn and beans and rinse them off so the juice from the can is completely gone. Pour the beans and corn into a mixing bowl and add the rest of the ingredients. Mix well and serve. Enjoy! 😋

How To Make This Black Bean and Corn Dip!

 

As I mentioned earlier, this recipe is SUPER EASY! If you don’t have a lot of time to spend in the kitchen then this recipe is for you.

Pour the beans and corn into a strainer and rinse them off with water. You don’t want the juice from the can to be in the dip. 

Then pour the beans and corn into a mixing bowl and add the chopped onion, red pepper, and cilantro. 

Next, squeeze the lime juice and add that along with the seasonings to the bowl and mix together. 

¡has terminado! (Spanish for, You’re finished!) 

 

Make some guacamole and you are ready to sit down and enjoy a simple and delicious meal. (Very filling too, I might add!) 😋

If you have hypoglycaemia (like me), you can just leave out the corn, it still tastes great!
