Since becoming vegan, I have missed yogurt-y types of foods. Vegan yogurt is available but it’s always loaded with sugar and soy. Neither of which I can eat. When I was younger I was never interested in health. When I was 20 years old I decided to add some healthy things to my diet. I chose to eat yogurt every morning for breakfast.
When I informed my coworkers of this they laughed at me! (Even they knew yogurt was loaded with sugar! haha!) Looking back I laugh at myself because there isn’t much health in regular yogurt. At least I gave it a little effort though, right? 😜
I should have known better, being raised in an environment that has a little more focus on health than usual. That just emphasises my lack of desire to eat healthfully!
Everything changed when I lost my health. The saying, “You don’t know what you’ve got ’til it’s gone” is SO TRUE!
Had I known everything I know now back in my teenage years and early 20’s I would have made a decided change for the better. I think that’s where another saying come’s in handy, “It’s better late than never”.
Knowing that what I eat has a direct impact on my body has helped me stand strong in my decision to take care of my health. I am the only one who can make that change, as easy or tough it may be.
Part of my mission is to present to others DELICIOUS vegan food. Food that makes them excited about eating because that’s exactly how eating is supposed to be. Exciting! Food that builds up our bodies, gives us the vitamins and nutrients we need to make our bodies as happy as our tastebuds.

How To Make This Vegan Parfait Recipe
Put all the “Pudding” ingredients into the blender and blend it until it’s smooth. Pour it into 3 or 4 cups or jars and put in the refrigerator for at least 15 minutes.
While you’re waiting for the pudding to chill, blend up your fruit topping. You can choose any kind of fruit for this! I have made it with strawberries and blueberries before but you can use mangos, peaches, raspberries, you name it!
Remove the pudding from the refrigerator and add the fruit topping. Cover with plastic wrap and put them back in the fridge. They are ready to eat!
Add all kinds of delicious things on the top such as my Vegan Granola, müsli, oats, ground flaxseeds and chia seeds, walnuts, pecans, almonds, dried coconut shavings, anything you like!
